Bravo! Penne Mediterranean

Bravo! Cucina Italiana Recipe

Serves 6

1/2 oz olive oil
1 teaspoon garlic, chopped
1 tablespoon sundried tomatoes, rehydrated
4 ounces vegetable stock
2 tablespoons feta cheese
2 tablespoons butter, unsalted
salt and pepper
7 ounces penne pasta, cooked
1 ounces baby spinach
1 teaspoon pine nuts

Heat oil and add chopped garlic and sun dried tomatoes. Then add vegetable stock, 1 tablespoon feta cheese, unsalted butter, and a pinch of salt and pepper and mix. Add penne pasta and toss, then add baby spinach and toss. Place in bowl. Garnish with remaining 1 tablespoon of feta cheese and pine nuts and serve.
