Blond Gazpacho


BLOND GAZPACHO
Bravo! Cucina Italiana Recipe

Serves 8

1 European cucumber, peeled, small dice
1 bunch green onions, thinly sliced
1 red bell pepper, small dice
2 cups small diced summer tomatoes (yellow, etc.)
2 cups small diced roma tomatoes
1/4 cup chopped parsley
5 cups sour cream
5 cups water or chicken stock
1 heaping tablespoon chicken base (add only if using water in place of stock)
2 dashes hot pepper sauce
cracked black pepper to taste
salt to taste
toasted salted sunflower seeds for garnish

Put all ingredients but sunflower seeds in large bowl and stir until well combined. Chill 1 hour or overnight. Top each serving with sunflower seeds as desired.
