Pecan Crusted Tilapia


PECAN CRUSTED TILAPIA

Tilapia:
1/2 cup all purpose flour
2 large eggs
1 cup panko bread crumbs
3/4 cup pecans, chopped
2 (5 oz) pieces of tilapia
1/4 teaspoon Cajun seasoning
salt and pepper to taste
2 tablespoons olive oil

Salad:
5 ounces field greens
1/4 small red onion, thinly sliced
6 strawberries, sliced
1/4 cup of your favorite balsamic herb dressing
2 tablespoons Boursin cheese, crumbled
2 tablespoons candied pecans

Place flour in a shallow dish. Beat eggs lightly in a second shallow dish. Combine Panko and pecans in a third shallow dish. Bread tilapia by first dipping in flour, then in eggs, then in pecan breadcrumb mixture. Season with Cajun seasoning, salt and pepper. Heat oil in a saute pan over medium heat. Gently place fish in pan. Cook until golden brown, about 3 to 4 minutes on each side. Set aside and keep warm.

Place field greens, red onion and strawberries in a large mixing bowl. Add dressing and toss to coat evenly. Divide salad onto two serving plates. Divide Boursin cheese and candied pecans on top on salad.
