Sausage Pizzaiola Pasta

Bravo! Cucina Italiana Recipe

Serves 4

2 tablespoons extra virgin olive oil
1 pound Italian sausage, sliced
1 teaspoon garlic, chopped
1/2 cup diced tomatoes
1/2 teaspoon fresh oregano, chopped
1/2 teaspoon fresh basil, Julienned
1/2 cup roasted red peppers, julienned
2 tablespoons caramelized onions
salt and pepper, to taste
24 ounces marinara sauce
1/2 cup fresh mozzarella, diced
1 pound pasta of your choice

Heat oil in a large, deep skillet. Add sausage and caramelize slightly. Add garlic, tomatoes, oregano and basil. Saute until garlic is cooked. Add peppers and onions. Heat through. Add marinara sauce and heat. Season with salt and pepper to taste. Cook pasta according to package. Add fresh mozzarella and cooked pasta to pan. Stir and simmer until cheese begins to melt.
