Shrimp Fra Diavolo


SHRIMP FRA DIAVOLO
Biaggi's Ristorante Italiano Recipe

2 ounces olive oil
2 garlic cloves, minced
pinch dry herbs
1 teaspoon chili flakes
6 large shrimp (16-20)
pinch salt and pepper
1 cup favorite marinara sauce
2 large basil leaves, chopped
1/4 pound spaghetti noodles

Heat a saute pan on a high flame and add the oil. Add the garlic and herbs and cook for 10 seconds so the garlic becomes golden brown. Stir with metal tongs. Add the seafood, chili flakes and salt/pepper and cook for 2 to 3 minutes stirring occasionally. Add the marinara and basil and cook for 2 to 3 more minutes.

In an 8 quart pot, bring 1 gallon of water and a pinch of salt to a boil on high flame. When it boils, add the pasta, stir often and cook for 7 to 8 minutes until the pasta is al dente (you can bite through with out a crunch). Drain and add the pasta to the sauce, toss together and serve. Try to keep the seafood on top and garnish with a basil leaf.
