Tilapia with Crab and Shrimp



TILAPIA with CRAB and SHRIMP

2 tilapia filets
2 teaspoons Cajun Seasoning
1 tablespoon olive oil
1/2 cup Crab and Shrimp Topping (recipe follows)

Season filets with Cajun Seasoning. Preheat the oven broiler. Grease a broiler pan with olive oil. Arrange the tilapia in a single layer on the prepared pan. Broil a few inches from the heat for 5 to 7 minutes.

Remove the filets from the oven and cover them with the Crab and Shrimp Cake mix on the top side. Broil for 2 more minutes or until the topping is browned and the fish flakes easily with a fork. Be careful not to overcook the fish. Serve with your favorite side dishes and a squeeze of lemon.

Crab and Shrimp Topping:
1 tablespoon vegetable oil
1/2 red bell pepper, diced
1 pound shrimp, peeled and deveined, cut into 1/2 inch pieces
1 cup mayonnaise
1/2 small egg, beaten
1/4 teaspoon Old Bay Seasoning
1 tablespoon spicy brown mustard
1 pinch salt and pepper
2 tablespoons parsley, chopped
1 teaspoon chives, chopped
1/2 cup Panko bread crumbs
1 pound lump crab meat
2 tablespoons oil

Heat 1 tablespoon of oil in a saute pan. Add the peppers and shrimp. Cook for 2 minutes. Remove from the heat and place in a bowl to cool. When cool, add the remaining ingredients. Stir gently. Form into 12 cakes about 3 ounces each. In a nonstick pan, heat 2 tablespoons of oil. Add the cakes an d saute on both sides until golden brown.
