FORMAGGI di CAPRA
Biaggi's Ristorante Italiano Restaurant Recipe

12 ounces goat cheese
1/2 cup cream cheese
2 tablespoons fresh flat leaf parsley, chopped
2 teaspoons fresh thyme, chopped
2 tablespoons chives, chopped
1 cup marinara sauce
8 Kalamata olives, pitted
10 slices baguette, cut on the bias
4 tablespoons butter
1 teaspoon garlic puree
1/4 cup Parmesan cheese, grated

Preheat oven to 350 degrees. Melt the butter in a small dish, add the garlic puree and stir. Brush garlic butter over both sides of each baguette slice. Place baguette slices on a baking pan and bake 5 to 6 minutes; turn slices, sprinkle with Parmesan cheese and return to oven and bake for 3 to 4 minutes or until golden brown.

Place the goat cheese, cream cheese, parsley, thyme and chives in a mixing bowl and blend. Transfer mixture to a baking dish and bake for 4 to 6 minutes until the cheese is slightly brown. Top with marinara sauce and return to the oven to bake for 2 to 3 minutes. Remove from oven and top with Kalamata olives. Place the baking dish on a large platter and place toasted bread slices around the platter. Serve immediately.
