Grilled Halibut with Citrus Relish


GRILLED HALIBUT with Citrus Relish
Biaggi's Ristorante Italiano Restaurant Recipe

2 (6 oz.) Halibut fillets (or Grouper)
4 tablespoons olive oil
2 ounces Citrus Relish (recipe follows)
dash salt & pepper to season
2 sprigs flat leaf parsley to garnish
4 tablespoons cilantro, chopped
1 mango. peeled, seeded & diced
1 small jicama, peeled & diced
1 lemon, peeled & diced
1 lime, peeled & diced
1 orange, peeled & diced

To make Citrus Relish (prepare 2 hours in advance): In a small mixing bowl toss the mango, jicama, lemon, lime, orange and cilantro with 2 tablespoons of olive oil. Season with a pinch of salt and pepper. Cover and refrigerate for 2 hours.

Prepare the grill for high direct heat. Season the fillets on both sides with remaining olive oil, salt and pepper. Place the fish on the grill, close the lid and cook for 3 to 4 minutes. Using tongs, and a metal spatula if necessary, carefully flip over the fillets. Close the lid and cook for 3 to 4 minutes. Remove from the grill, place on a platter and spoon the Citrus Relish over the top of the fish. Garnish with parsley. Makes 2 servings.
